Don't think anyone knows for sure. However, you often find that tables are frowned upon in CA3. Rather they prefer just a couple of examples within text and then yes the numbers would be in the count. Remember you can get away with +/- 10% or around 50 words so I don't think it will be make or break.
Yes, they all count as words. Tables are allowed (but they don't count as 'graphs' within presentations), as long as you say what's going on in them - so don't use phrases like "as you can see...". Spell it out. The examiners have used tables (occassionally, not often) in their "model solutions" before.
