On why we use the third difference when assessing smoothness, the first paragraph of the solution mention:

.. Although these [second and third order differences] might be satisfactory approximations over some parts of the age range, they would not allow for rapidly increasing rates observed at older ages. So we usually need to look beyond the second differences.

Can someone please elaborate this in layman terms?
