How would people recommend studying for both SP5 and SA2? Switch day-by-day or week-by week? Two in the one day would likely be reserved for weekends or study days.

This will be a challenge but if you are committed to putting the hours in, then it is achievable. Note that the recommended hours for an SP is 200 hours, and an SA is 300 hours. Yes, mixing the two subjects on a daily basis might work as it helps keep it fresh. And towards the middle of SP5, there are numerical questions which will be nice break from the wordy parts of SA2.
